Steak Tartare

Called Carpaccio, after the title of a painting that hung at Harry's Bar in Venice, it is an elegant, yet easy to make appetizer that can be recreated at home with prime-grade, restaurant quality steak.

Steak tartare is another specialty that is found in five-star restaurants. Made from chopped, ground, or thinly sliced raw strip steak and marinated in wine and spices, it is often served with onions, capers, pepper, and slices of rye toast.

Steak TartareTo make Steak Tartare:

2 pounds filet of beef
1 egg, yolk only
1 tablespoon finely diced onion
1 tablespoon capers
1 teaspoon Worcestershire
Tabasco to taste
2 teaspons Dijon mustard
2 tablespoons olive oil
2 tablespoons parsley, chopped
Salt and Pepper to taste

Method: Grind filet finely or ask Big Daddy to grind it for you. In a bowl, mix egg yolk with onions, capers, Worcestershire sauce, Tabasco, Dijon mustard, salt and pepper. Add olive oil and whisk.

Mix in meat and parsley, and mix thoroughly.

Refrigerate or serve immediately. Makes a great appetizer! Because of the nature of the dish, it is absolutely critical you know the source of your meat and you consume it within two hours of making it.
